Finely chop the tomatoes and place them in a colander over a bowl. Sprinkle with a little salt to draw out excess water.
Mince the basil and garlic, then combine with the tomatoes. Add olive oil, balsamic vinegar, and season with salt and pepper to taste.
Toast the bread slices under the broiler until they are golden brown on both sides.
Top each bread slice with a generous amount of the tomato mixture. Sprinkle with grated Parmesan cheese and serve immediately.
