Origin
Tabasco sauce is named after the Mexican state of Tabasco, where it was first produced. It was created by Edmund McIlhenny, an American businessman, in the mid-1800s. McIlhenny used a pepper variety called Capsicum frutescens var. tabasco to make the sauce. The peppers were originally from Central and South America and were brought to the United States by Spanish explorers. Today, Tabasco sauce is still produced in the same region of Tabasco, Mexico, using a traditional fermentation process.
