In a skillet over medium heat, brown the ground beef, seasoned with salt and pepper, until fully cooked. Drain any excess fat.
Cube the Velveeta cheese and add it to the skillet along with the entire can of Rotel diced tomatoes and green chilies. Stir until the cheese is melted and the ingredients are well combined.
Once the cheese is fully melted and the mixture is smooth, stir in the sour cream for extra creaminess. This step is optional.
Serve the dip hot with your choice of dippers, such as tortilla chips, bread cubes, or vegetable sticks. Enjoy your delicious Rotel dip!
