Bring the steaks to room temperature. Season all sides of the filet mignon generously with salt and freshly ground black pepper.
Heat olive oil in a cast-iron skillet over high heat. Once hot, add the steaks and sear each side for 2-3 minutes until a brown crust forms.
Reduce the heat to medium. Add butter, minced garlic, and fresh herbs to the skillet. Spoon the melted butter over the steaks repeatedly for about 3 minutes.
Remove the steaks from the skillet and let them rest on a plate for 5 minutes. This allows the juices to redistribute throughout the meat, ensuring it's moist and tender.
Serve the filet mignon steaks with your choice of sides, spooning the garlic herb butter from the skillet over the steaks before serving.
